The Reopening and Rebranding of Calypso Hut 1

Haven't been opened since 2000, Gary Rampersaud and his wife Martha reopen Calypso Hut

Nestled in a commercial strip plaza on Steeles Ave in Woodbridge close to highway 400, Calypso Hut 1 opens its doors in March of 2024, Gary Rampersaud and his wife Martha embark on a journey to continue his father, Stanley Rampersaud’s cherished legacy, rooted in a rich history of culinary excellence and family traditions.


Stanley opened its first location in 1988 between Jane street and Weston Road at 2011 Lawrence Ave West. The restaurant became a beloved fixture among West Indians, drawn to its authentic Guyanese- Chinese cuisine, a nostalgic taste of home that resonate deeply with the flavours and traditions of Guyana. Unfortunately, they closed their doors in the year 2000 due to unfortunate circumstances. With the success of Calypso Hut, the name continued to live on as Stanleys brother’s Paul and Peter asked if they can open their own locations. Calypso Hut 2 opened in 1990 on Torbram Road and Steeles Ave in Brampton and Calpyso Hut 3 in 1993 on Finch Ave and Chesswood Drive in North York.

 

As whispers of Calypso Hut 1’s long-awaited revival began to circulate as Gary would post to his social media teasers and hints that it was coming back, excitement rippled through not only the West-Indian community but for anyone who has been a fan of the original location and anyone that enjoys the rich culture that is Guyana and West Indians. News of its reopening sparked a buzz and eager patrons waited until the grand opening to relive the cherished flavours and atmosphere that defined the beloved establishment.


Grand reopening day was Friday, March 15th, 2024. It was a cool 11 degrees in the city of Woodbridge, no snow, minimal clouds and something unexpected: a line stretching out the door along the strip plaza as the anticipation and buzz had really made an impact. It was definitely a sight to be seen. Every seat was filled by patrons savouring their meals created by the son of the original chef from the original Calypso Hut, which added an even more authentic flair to its taste. The bar buzzed with activity as drinks flowed and the air was alive with energy and infectious beats spun by a live DJ creating an environment and ambiance that perfectly complemented the vibrant atmosphere that is Calypso Hut 1. Reopening day was a complete success. The name, the brand and everything Stanley had worked for, had come to life through his son.

 

Gary and Martha driven by a deep sense to pay homage to his father’s legacy, he envisioned Calypso Hut more than just a restaurant, it was a tribute to the remarkable foundation that his father had laid and the memories he had growing up. However, beyond just nostalgia, Gary aspired to create a lasting legacy for his own young children, hoping to build an empire for them that would not only honour the past but also pave the way for a prosperous future carrying on the family tradition and all that makes Calypso Hut 1 what it’s known for.

 

Not all is perfect when it came to the Calypso Hut name. Amidst the challenges of maintaining a peaceful atmosphere, Calypso Hut 2 and Calypso Hut 3 found itself grappling with disruptive incidences sparked but a few unruly patrons at these locations. Determined to prioritize their community’s well-being, the decision was made to relocate and seek a new environment from such disturbances. Calypso Hut 2 and 3 moved to another part in Brampton and a location in Mississauga. This move not only aimed to ensure a drama free ambiance but also to better serve their loyal patrons, providing a space where it was welcoming, and everyone could enjoy the flavours of the West Indies. In that, Gary had learned that he didn’t want that kind of vibe. He didn’t want a repeat of what happened in previous locations where people didn’t feel safe or a place that Guyanese bars and restaurants are used to: which is drunk men, fights, place where women didn’t feel safe from harassment and just a lot of uncouth drinking. He wanted to change this. With a vision of elegance and a classier vibe, Gary and Martha set out to create a haven where patrons could enjoy themselves without the intrusion of drama. They wanted it to become more than a restaurant but a place where girls can celebrate their birthdays and have cherished girl’s nights, where couples can have date nights or families coming in to eat a family dinner. Introducing speciality cocktails, drink specials, leather booths and marble counter-tops, and refining the ambiance to include some more of radiated sophistication, this would differentiate themselves from the other West Indian restaurants in the area.

 

So, what are the customers saying? How has the reviews and feedback been? Well, many of the customers ask if this place is connected to Stanley and the original Hut and are pleased to hear that in fact, his son is now the owner and carrying it on. They also loved to hear that the chef is also the son of the original chef, talk about carrying on the family name! Many patrons have said not to ever change the chef as they love the food so much and it’s so nostalgic and reminiscent. Some customers have mentioned they were skeptical to come to this location as they expected a typical Guyanese type bar as they don’t usually frequent places like that due to the incidences they’ve experienced but when they saw the atmosphere and the vibe, they were comfortable enough to sit down and enjoy a drink and some food and left with good reviews. Google reviews have people saying the food, the drinks and the staff are all amazing as they love the new vibes and will continue to show their support.

 

Now, let’s get to the good stuff, my personal review. When you first step into the doors of Calypso Hut 1, the vibrant strains of West Indian music greet you. The rhythm and melody already transport you into a good place and I haven’t even stepped inside the second set of doors yet. Depending on the time, if it’s the day for lunch the sun beams through the large, front windows but if it’s at night, the dimly lit interior creates an aura of sophistication with touches of marble and leather which hints this establishments commitment to elegance. The stylish marble backdrop at the bar is lit showcasing their top shelf liquors including Hennessy VSOP, Claze Azul, Blue Label Johnny Walker and Guyana’s drink: El Dorado. 12 year, 15 year, 21 year and a special 25 year. With each note of reggae, calypso, soca and chutney, I knew I had discovered a place where culture, comfort and a great dining experience was about to be had.



Their drink menu was different. I was used to the simple rum and cokes, the vodka sodas or screwdrivers on menus at West Indian bars but this one was special. They had drinks like Bare Passion Margarita that’s served in a cute mason jar rimmed with Tajin and a jalapeno inside! Like, who even thinks of that and the flavours work! My favourite is the Dragon fruit Mania, which as you guessed, has dragon fruit flavour, a sweet yet sour concoction that is addictive. Their hut special is their version of a rum punch which is a classic favourite. It was definitely sophisticated and unlike the chaotic pace of a club, the atmosphere made me want to invite my girls to hang out and unwind.


Their food is chefs kiss. I grew up eating a lot of Chinese-Guyanese food and It was always the same and I never really enjoyed it. But, their lo mein has become my favourite because of the sauce that the noodles absorb and is full of veggies and I like to add the chicken on top. Their pepper shrimp is probably the best I’ve tried in this city as its bursting with bold spices, and the perfect amount of heat and flavour. It’s no wonder their customers rave about this dish. As always, their Special Chicken Fried Rice features lots of vibrant vegetables, chicken mixed inside and a fried chicken leg on top. Oh, did I mention their pepper sauce is to die for??? They even offer Black Pudding and Lamb pudding on weekends which is a favourite for all West Indians. It sells out really fast too.

 

As of today, Stanley Rampersaud has a Calypso Hut location in Berbice which is in Guyana as this is where he now resides. Gary and Martha will continue to carry on this legacy as he commits to ensuring future generations get to savour the same culinary delights that made the original establishment what It was. The past now seamlessly intertwines with the present and the promise of new beginnings starts with every bite of their food and every sip of their delectable drinks for many years to come.
